Street Food: Jerusalem

In a region where tension and politics dominate the media and global conversations, there also is a long history of outstanding street food. This common identity is so similar, yet so diverse. It's usually at a the table where differences are set aside. I'm curious what would be the outcome if a table was setup for regional voices to set down and share such wonderful food.

Breaded Pork Chops

I've been craving this dish lately. Breaded pork chops with potatoes, peas, and apple sauce. Here is a great recipe for "breaded pork chops." Enjoy!

INGREDIENTS:
8 pork chops 3/4 inch thick
salt
black pepper, freshly ground
2 cups all-purpose flour
3 beaten eggs
japanese bread crumbs
vegetable oil
paprika

1. Trim the excess fat from the edges of the pork chops. Sprinkle them generously with salt and pepper.

2. Season the flour generously with salt and pepper. Dredge the pork chops in flour until coated on all sides. Shake off any excess flour. Dip in beaten eggs and then in the japanese bread crumbs. Pour enough vegetable oil into a heavy deep skillet to fill it to 1 inch. Heat over medium heat to 375¡F.

3. Add only as many of the pork chops to the skillet as will fit without touching. Cook them, turning them once, until cooked through and deep golden brown, about 12 minutes.

4. Remove the pork chops from the skillet to drain. Sprinkle them with paprika and serve hot.

Jezebel Sauce

This southern favorite has been quite the hit around the house for the past few weeks. Enjoy!!

INGREDIENTS:

One 16 oz jar apple jelly
One 16 oz jar pineapple preserves
One 5 oz jar horseradish
One 4 oz can dry mustard
Salt and pepper

PREPARATION:
Combine all ingredients and pour over cream cheese and serve with your favorite crackers.

How to Cook Lobster

Lobsters
You will need a large enough pot to fit your lobsters with enough water to cover them. Fill pot three-quarters full with cold water. Add about 2 tablespoons salt. Bring to a full boil. Add live lobsters and allow to reach a second boil. After second boil, cook for 12 to 15 minutes.

Baked Chicken

INGREDIENTS:
5 chicken breasts or thighs
1 can whole cranberry sauce
1 package onion soup mix
8 oz. French dressing

PREPARATION:
1. Place chicken in baking pan.
2. Mix the remaining ingredients and pour over chicken.
3. Bake at 350 degrees F for 1 hour.

Peaches & Cream Coffee Cake

INGREDIENTS:
3/4 cup flour
1 tsp. baking powder
1/2 cup milk
1/2 tsp. salt
1 egg
2 Tbsp. margarine
1 can sliced peaches, drained (save juice)
1 pkg. cream cheese
1/4 cup peach juice
1/2 cup sugar

PREPARATION:
1. Beat together first 6 ingredients.
2. Grease an 8x8 inch pan. Pour mixture into pan.
3. Place slices of peaches on top of pie mixture.
4. Beat together cream cheese, peach juice, and sugar. Spread on top of mixture about 1 inch from sides.
5. Sprinkle 1 Tbsp. sugar and 1 Tbsp. cinnamon over top.
6. Bake at 350 degrees F. for 30-35 minutes.

Pad Thai

I can't help it but lately I've been craving Pad Thai. If you've never enjoyed Pad Thai it's simple and very good. Pad Thai is a dish of stir-fried rice noodles with eggs, fish sauce, tamarind juice, red chilli pepper, plus any combination of bean sprouts, shrimp, chicken, or tofu, garnished with crushed peanuts and cilantro. It is normally served with a piece of lime, the juice of which can be added along with the usual Thai condiments. In Thailand, it is also served with a piece of banana flower.

This dish was introduced and made popular as a national dish by Luang Phibunsongkhram when he was Prime Minister during World War II, partly for his nationalism campaign, and partly for a campaign to reduce rice consumption in Thailand at a time when the government faced a major budget crisis. He was helped in this regard by the famous aristocrat, Prapavee Kunuchit.
